These were great, but even better the next day. I sauteed the zucchini with 2 cloves of minced garlic. I also toasted the bread with extra butter. Thanks for the recipe!!

Oh, these were so good. I added some sliced red pepper and mushrooms because I wanted to use them up.I drizzled some olive oil and sprinkled garlic powder over the rolls then,toasted the rolls before filling them. Yum!

LOVE IT!! LOVE IT!! I have made this twice now. Just a wonderful basic recipe. I used sliced portabella mushrooms and onions in mine to give it a meater flavor. For the die hard carnivore use a jar of meat spaghetti sauce. But no one missed not having the meat both time I made it. Thanks again for a great recipe

These are great. Even my 2 kids that aren't vegetable eaters loved these. Excellent way to use up extra zucchini.

These were excellent! I am giving 4 stars since I changed the recipe a bit to make it better. I used zucchini, summer squash, mushrooms, green peppers, and onions. Left the cheese out because that is a lot of cheese and not necessary. Instead I sprinkled Parmesan on top. I also didn't bake them, just spooned the mixture into the bread.

I have never given anything 5 stars so far, but this deserves it! Simple and FABulous! The only I added was chopped garlic and some fresh parsley! Looking for a vegetarian version of a meatball sub, you found it!

This was very good. I toasted the buns in the oven with the mozz cheese first, then added the filling and wrapped in tin foil as directed. We all ate it up!

Wonderful! My children and a friends children all really enjoyed these sandwiches. So did my husband and I and the in-laws. I followed the suggestion of toasting the rolls first and they didn't get soggy, even leftovers the next day weren't too soggy. I highly recommend this recipe.

Delicious! I think the zucchini mixture would be delicious in a variety of pastas...maybe even on it's own a side dish to something like chicken. What a great alternative to your regular meat sandwich.

These were pretty quick, easy and delicious! I used olive oil instead of butter, and since I only had plain tomato sauce on hand I added onion, garlic, basil, oregano and a smidge of sugar, as if making my own sauce, then let it cook down a bit. Also added some sliced baby bella mushrooms, because I like them. Served on crusty french bread, which I hollowed out to save a few "white bread" calories/carbs as well as make room for more of that yummy zucchini filling. Topped with mozzarella and parmesan and toasted. This was a much more satisfying meal than I was expecting it to be, and one that I will surely make again.
